$6.00/lb, 5 lb packs. Beef Soup Bones are well-trimmed and ready for making stock. We encourage our customers to use the bones to make multiple batches of stock. We've successfully reused them up to 3 times. Bones are not sorted and may include marrow bones, rib bones, and shoulder bones.

Bones, Pork Soup Bones (5 lb)

$1.50/lb, 5 lb packs. Pork Soup Bones are a great way to get more gelatin into your diet. They produce a medium-darkness broth, lighter than beef broth, but darker and richer-tasting than chicken broth. Pork bones are especially rich in gelatin.

$4/lb and packed in approximately 5 lb bags and pre-ground for your convenience, we now have beef fat available for a limited time! Render it like lard to make the best quality frying fat (called "tallow") you have ever used. Also wonderful for use in homemade soaps. Very limited availability.

Fat, Pork Back Fat - Ground

$1.00/lb, 5 lb per pack. Ground Pork Fat is used to make rendered lard for use in place of vegetable shortening. It is very simple to do at home and takes less than 1 hour with the Ground Pork Fat. We use home-rendered lard for all baking and frying as well as for greasing pans and sauteing vegetables. Lard can also be used to make soap.

Heart, Beef Heart

$6.00/lb, packed whole, sizes range from 2.5-5lb. Beef Heart is not actually an organ, but a muscle meat, and should be slow-cooked. Many recipes call for stuffing it with various items like apples and sausage.

$8 per quart. Rendered Lard is ready to use for oiling pans, replacing shortening and vegetable oil, and as a healthy source of vitamin D. Ours is creamy white and can be used for pastries, frying, and general oil use in cooking. You can even use it to make soap!

Liver, Beef (Sliced)

$6.00/lb, packed sliced in 1 lb packs. Beef Liver is rich in heme iron, vitamin A, and lots of minerals. We include it on our menu at least twice per month and serve it cooked like a steak (hot and fast) with lots of onions and gravy. Marinating in milk prior to cooking makes the texture and flavor more mild.

Liver, Pork (Sliced, 1 lb)

$3.00/lb, 1 lb per pack, sliced. Pork Liver falls somewhere between Beef Liver and Chicken Liver in both texture and intensity of flavor, although it looks just like Beef Liver. It has a creamier texture and sweeter taste than Beef Liver and can be used to make Pate (Liver Mousse). Soak it in milk before cooking to improve the flavor even more!
