Tip: Because the Loin Strip of grass-fed cows is so very lean, we strongly recommend a couple of days marinating in the fridge to tenderize this roast, then using an oven thermometer during cooking to determine internal temperature. Only bring this baby to 125F internal for rare! Then let it rest under foil for at least 10 minutes before slicing.
